紫(zi)(zi)薯(shu)(shu)(shu)(shu),屬旋花科甘(gan)(gan)薯(shu)(shu)(shu)(shu)屬草本植(zhi)物(wu),薯(shu)(shu)(shu)(shu)肉(rou)呈紫(zi)(zi)色至深紫(zi)(zi)色,故又稱黑薯(shu)(shu)(shu)(shu)、紫(zi)(zi)心甘(gan)(gan)薯(shu)(shu)(shu)(shu)或紫(zi)(zi)肉(rou)甘(gan)(gan)薯(shu)(shu)(shu)(shu)。紫(zi)(zi)薯(shu)(shu)(shu)(shu)是甘(gan)(gan)薯(shu)(shu)(shu)(shu)的(de)一個特(te)殊(shu)品(pin)種類型,兼有糧食物(wu)、經(jing)濟作物(wu)和藥用作物(wu)的(de)特(te)點(dian),紫(zi)(zi)薯(shu)(shu)(shu)(shu)含10多種礦物元素,18種氨基酸,8種維生(sheng)素,特別是含有大(da)量藥用價值的(de)花青素。
紫薯烘干工藝
待烘房溫度升至大約(yue)30℃時(shi)(shi)將紫(zi)薯片放入(ru)烘(hong)(hong)房(fang)內(nei)部,設定(ding)溫(wen)(wen)度為(wei)40℃,烘(hong)(hong)干(gan)時(shi)(shi)間為(wei)1-2小(xiao)時(shi)(shi)。溫(wen)(wen)度設定(ding)為(wei)45℃,烘(hong)(hong)干(gan)時(shi)(shi)間為(wei)2-3小(xiao)時(shi)(shi)。溫(wen)(wen)度設定(ding)為(wei)60℃,烘(hong)(hong)干(gan)時(shi)(shi)間為(wei)3小(xiao)時(shi)(shi),此時(shi)(shi)紫(zi)薯片含水量應不超過10%。關閉電源,1小(xiao)時(shi)(shi)后取出物(wu)料,再(zai)進行室溫(wen)(wen)回軟1-2小(xiao)時(shi)(shi),此過程挑出未(wei)達(da)到干(gan)燥要求的(de)薯片進行再(zai)次干(gan)燥。
